I know this sounds a little odd, but it’s yummy!
My family has been vegetarian for a couple years. We do eat fish. We don’t eat dairy (80% of the time.) I like to say we are aspiring vegans.
My husband loves shrimp & grits and orders it everywhere we go. We live in the south where you can find it everywhere, but each restaurant has a different take on it.
Tonight I was looking through the fridge to see what I could cook for dinner and I came up with this dish. We didn’t have shrimp, but we had tofu! So Vegan “Shrimp” & Grits was born. And it was a hit with EVERYONE…which is amazing!

The great thing about this recipe is that it would be good with just about anything. You can really make this with whatever you like. Vegan or not. Here’s what I used:
Earth Balance (vegan butter)
Daiya Shredded Cheddar (vegan cheese)
Spinach, about half a bag
1/2 an onion
1 pack of firm tofu, cut into cubes
1/2 a jar of mild salsa (That’s all I had in the house. You may want to use more salsa and less diced tomatoes.)
1 can diced tomatoes
First, I made grits following the directions on the package. Then I added a scoop of Earth Balance and some Daiya cheddar. I didn’t measure. Just stir it in until it seems like enough. I also added salt & pepper.
Next, I sauteed the chopped onion and minced garlic in some coconut oil. I added the spinach and covered the pan so it would wilt down.
Then, add the salsa, tomatoes, any spices you’d like and let that simmer a few minutes. Add the tofu and stir gently so you don’t break up the tofu too much. Let that cook for a few minutes and you are done! My girls don’t like spicy food so I couldn’t make it too hot, but it would be great spiced up a bit.
Put some cheesy grits in a bowl, put the tofu mixture over it, top with some more cheese. Eat and enjoy!
This would be great with some corn, zucchini or squash, more spinach, more spice… My girls ate their whole bowls without complaining. That is unheard of around here.
I’d really like another bowl but my husband just finished it off.
